Smoked Meat
Don’t miss taking a look at our smoked case. We smoke quality meats and cheeses in-house with an old fashioned alder smoke. We believe that to have a great end product, we need to start with a good product. We do not use any fillers in our smoked meats.

Local Legend: Xinh Dwelley
We are proud to carry on the legacy of Xinh Dwelley by serving her well-known Eggroll Recipe.
To those native to the South Puget Sound the name Xinh conjures up images of fresh shucked oysters, geoduck chowder, muscles in curry and eggrolls. Pick up a copy of her cookbook Pacific Coastal Flavors, the next time you are in.

Xinh started cooking in South Vietnam as a young woman and brought her innovative approach to preparing satisfying dishes with her when she came to the United States in 1970, with her husband, Larry, a G.I. in the U.S. Army, and their four month old son, Bill.
After settling in near Olympia, Xinh, with the help of her husband built her own concession cart and began selling her eggrolls and soups at the Olympia Farmer’s Market. Eventually she found work shucking oysters with Taylor Shellfish, and doing it so well she won five West Coast Oyster Shucking Championships, and several regional cooking competitions over the years.
Recognizing her talent and taste, Taylor Shellfish opened a restaurant in Shelton with Xinh behind the wheel. For twenty-five years she brought the community her inspired dishes highlighting the local seafood and shellfish, and diners from around the Puget Sound would flock to Shelton to experience her cuisine.
In 2016 the restaurant closed to allow Xinh a less demanding schedule. Xinh’s famous geoduck chowder is still available at some of Taylor Shellfish’s locations around the area, though her eggrolls were missed too. New owners at Steamboat Grill & Greens, a Steamboat Peninsula drive-through restaurant, with a fresh take on what fast food can mean, provided the opportunity for collaboration with Xinh to bring her much loved, and missed eggrolls to the masses once again.
Xinh only uses the freshest and highest quality ingredients, sourcing her pork from her local butcher shop, Home Meats Service in Kamilche, Washington.
